First, make the vegetable broth with…
1- bunch of carrots chopped
4- stalks of celery chopped
1- large onion chopped
1- teaspoon of black pepper
1- teaspoon of kosher salt
1- tablespoon chopped garlic
6- cups of water
Bring this to a boil and then simmer for twenty minutes. Drain liquid and reserve the liquid for use later. Puree stock vegetables but be careful….they’re very hot!
In a soup pot add…
1- tin crushed tomatoes
1- tin plain tomato sauce
1- tin coconut milk
Add all pureed stock vegetables
2- tablespoons sugar
3- tablespoons curry powder
1- teaspoon cumin
Add all the reserved stock liquid
Re-heat slowly till piping hot to serve.

Ingredients:
1 Bunch of Green Onions
3 tsp vegetable oil
4 large carrots
1 head cauliflower broken into small pieces
2 liters vegetable stock
1tbsp yellow curry paste
1 1/2 cups coconut milk
1 tsp minced parsley
Directions:
Mince onion and sautee in vegetable oil. Chop or julienne carrots. Add carrots and cauliflower to the onions. Add all the vegetable sock and cook until the vegetables are tender. Add the curry paste and coconut milk. Serve garnished with minced parsley.
