Cilantro Lime Chickpea Corn Salad

2 cans chickpeas, drained & rinsed

1 cup corn, roasted with child powder, salt and pepper

4 loosely packed cups of fresh spinach

1/2 red onion, chopped small

1/2 cup feta (optional)

1/2 cup chopped roasted red pepper (optional)

juice from 4 limes

1 bunch of cilantro (approx. 1 cup), chopped

3 tbsp sugar

2 tbsp dijon mustard

2 cloves garlic, finely minced or grated

1/2 tbsp chili powder

1/2 cup olive oil

 

Chop the spinach very finely. Add the chickpeas, onion, and spinach to a large bowl. In a bowl, mix together lime juice, cilantro, sugar, mustard, garlic, chili powder, and olive oil. Mix until it comes together as a dressing. Pour over the chickpeas, onions, corn and spinach and mix well. Add salt and pepper to taste. Let sit for about 10 minutes in fridge for best flavours. Enjoy!
