Broccoli Bake… for 150 (just Kidding)

Serves 6-8.



Bunch Broccoli (about 1 1/4 lbs) you can use frozen.
3 tablespoons butter or margarine
2 tablespoons flour
1/2 teaspoon salt (to taste)
Freshly ground pepper
2 tablespoons minced onion
1 1/4 cup milk
1 1/2 cup shredded cheddar cheese
2 eggs


Pre heat your oven to 325*
In your favourite boiling pot, put about 1” of salted water
Trim and coarsely chop broccoli and boil in salted water for 3 minutes or until crisp tender, drain well.
Meanwhile, in a deep frying pan or pot on Medium High..
Melt butter/margarine- blend in salt, pepper, onion and then flour. Stirring continuously for one minute.
Pour in milk and continue stirring while cooking until the mixture thickens. (We’ll call this our “White Sauce”)
Add thickened white sauce and cheese to broccoli and stir gently to combine.
Beat eggs and add to the broccoli mixture.
Turn into greased 8” square baking dish.
Bake at 325* for about 25 minutes or until set in the centre.
Use a knife to check that this dish is cooked by inserting the knife and pulling it out with a clean blade, you then know the dish is ready.
This dish can Sit & Settle on a warm tray or the oven top for up to 10 minutes prior to serving.
